Pro Tip
Soaking small chickpeas with baking soda overnight (12-14 hours) is the key secret to getting melt-in-the-mouth soft chickpeas without using a pressure cooker. For authentic taste and natural aroma, always use 100% pure and unadulterated spices from Kaaf Foods™.
How To Cook
Step 1: Prep Pastes & Base Masala
Blend ginger-garlic and green chilies into separate pastes. Heat ghee, sauté onion softly, add whole spices, ginger-garlic paste, and green chili paste. Add dry spices and salt. Fry for 15 mins on low heat, then separate the excess ghee (Tari) on top. 15 Mins
Step 2: Boil Chickpeas & Lentils
Boil soaked chickpeas with water (1 inch above chickpeas). Skim off the foam, add soaked red lentils, and cook on medium-low heat until tender. 20 Mins
Step 3: Combine & Simmer
Add the prepared masala gravy to the boiled chickpeas. Mix in extra black cardamoms and Karahi masala. Cook on low heat. 10 Mins
Step 4: Milk & Dum
Stir in ½ cup milk for a creamy texture and light color. Adjust salt, cover tightly, and simmer on very low heat for 15-20 minutes until ultra-soft. Serve hot with reserved Tari and fresh Naan. 20 Mins

FAQs

Frequently Asked Questions

Why are small chickpeas (Kabuli Chana) preferred for Lahori Chanay?
Small chickpeas absorb water better, cook down to an ultra-soft texture, and hold the gravy flavor perfectly compared to large chickpeas.
What is the purpose of adding Red Lentils (Masoor Dal)?
Masoor dal dissolves completely during boiling, creating a naturally thick, smooth, and rich gravy base.
Why is milk added near the end of cooking?
Milk adds a subtle creamy flavor, balances the spice heat, and gives the gravy a lighter, authentic street-style color.
Why do we separate the ghee (Tari) after making the masala?
Separating the Tari keeps it bright and clear, allowing you to pour fresh ghee on top when serving, exactly like commercial vendors do.
Can I make this recipe in a pressure cooker?
Yes, but overnight soaking allows the chickpeas to cook naturally soft in an open pot within 20 minutes without needing a pressure cooker.
Why coarsely crushed black pepper is used instead of fine powder?
Fine black pepper powder turns the gravy dark and black, whereas coarsely crushed black pepper retains the light gravy color.
Is onion essential for Lahori Chanay gravy?
Only a small amount of onion is used to soften the base; adding too much onion makes the chickpeas sweet.
What gives Lahori Chanay its distinct commercial fragrance?
A small hint of Karahi Masala along with star anise, cloves, and black cardamom provides that distinct street-side aroma.
What is the best serving combination for Lahori Chanay?
Serve piping hot with fresh Roghani Naan, Kulcha, or Poori along with sliced onions and pickles.
